4th of July Icebox Cake
There’s nothing better than a refreshing dessert on 4th of July. Wait, there is! A festive one. My son and I worked together to make something I have always enjoyed making as a summer dessert, an icebox cake. You don’t have to turn on the oven, everyone always raves about them, and they make for even better leftovers.
The general idea of an icebox cake involves layers of something like cake or crust, a creamy filling, and some fruit or other ingredient for texture (such as crushed chocolate candy). Because we are on our 250th celebration of our country, we decided to search up and find a celebratory theme that included simple ingredients.
My kids both help me in the kitchen from time to time. This time it was the other way around - I was there to help my son. He will bring this cake for dessert elsewhere and it is sure to impress. We haven’t been able to taste-test it because it must chill in the refrigerator for at least 4 hours, but we did taste the filling and it is delicious.
